**Step 1**
πΏ Roll the roast in Herbes de Provence and pepper.
**Step 2**
π§ In a bowl, create a bed of coarse salt, place the roast on top, and cover it completely with salt (make sure no meat is exposed!).
**Step 3**
π₯Ά Cover with a lid or plastic wrap and place in the fridge for 48 hours.
**Step 4**
πͺ Rub off the salt, slice the roast very thinly, and serve cold with a delicious mayonnaise or bΓ©arnaise sauce.
