Ossobuco is actually the name of a dish consisting of veal shanks braised with vegetables, white wine and broth. It is traditionally served with either risotto or polenta in the Italian cuisine. In the French cuisine, these slow cooked veal shanks are delicious with an aligot, a typical dish from Auvergne that consists of melted Tomme de Salers cheese blended with mashed potatoes, milk and a bit of garlic.
