Product: You will find in our sauerkraut (choucroute) kit all the essential ingredients to make a delicious Sauerkraut/Choucroute:
- Sauerkraut (1Kg)
- Strasbourg sausages (4 pieces)
- Morteau sausages (300Gr, 2 pieces)
- Smoked diced pork belly (250Gr)
- Organic potatoes (500Gr)

Step 1: Put a large saucepan on medium heat with a drizzle of oil. Add the onion and garlic and cook over moderately low heat, stirring, until softened (about 7 minutes).
Step 2: Stir in half of the the sauerkraut with a bouquet garni and black pepper. You can wet the sauerkraut with a bit of chicken stock (optional: you can add wine at this stage) and bring to a rolling boil over high heat.
Step 3: Add the smoked diced bacon lardons and cover with the rest of the sauerkraut. Once it starts boiling again, cover and let it bake over moderatly high heat for approx 1 hour.
Step 4: Meanwhile, in a large saucepan, cover the potatoes with cold water, add salt and bring to a boil over high heat; cook the potatoes until tender when pierced. Drain the potatoes and cover to keep warm.
Step 5: After 1 hour, add the Strasbourg sausages to the sauerkraut, cook for another 15 minutes.
Step 6: Cook the Morteau sausages in boiling water for approx 15 minutes. Cover and reserve on the side once cooked.
Serve your delicious sauerkraut while it's hot!
