Product: Made in the Puy-de Dôme, Roche Montagne is a marbled paste whose rind is ashy at the end of ripening. Its paste is similar to that of a Reblochon, supple and creamy with a light marbling.
This cheese has only a few years of existence and in fact, Roche Montagne was a response from our cheesemaker Pascal Beillevaire to consumers demand rather than a traditionnal cheese.
The idea came to combine the technique and the shape of Reblochon on a sowing with penicillium glaucum.
This Blue cheese is definitely the cheese that brings everyone together thanks to its delicate taste and soft texture. Even the usual blue cheese ennemies will love this one!
