Munster cheese is a Petit Munster (due to its size) made from raw milk produced by the cows living in the Alsace and Lorraine regions. It dates back to the Middle Age where the Vosgian abbeys and monasteries used to make it by hand. Its red coating is due to the repeated washings that give the cheese a strong, penetrating aroma and peppery taste.
