The Pechegos cheese have a lovely lightness, with the sweet hints of flowers and herbs coming through the nutty sharpness. There is a band of spruce encircling the cheese to keep the soft, almost melting texture intact. Late spring is an especially good time to taste these cheeses.
About the producer: La Fromagerie du Pic gets its milk out of six goats herds, grazing in an environment of causse (limestone plateau), undergrowth and natural meadows. They respect specifications such as a healthy, rich, natural and varied diet, a minimum of 160 days in pastures per year, and more.
