The Moelleux du Revard is a raw milk cheese, with a supple crust of pink colour. Rang with a spruce pine-tree bark, the dough becomes brown by absorbing the tannins of the wood. Slightly salty, the aromas are woody and milky with an unctuous texture that gives great generosity.
The producer: The Moelleux is matured for five weeks at the skirt of the Mont Revard, above the Lac du Bourget (Savoie), by the cheesemaker Schmidhauser. It is made out of Alpine breed cows, raised in the open air and pasture-fed.
