A pale, golden yellow, firm and melt-in-the-mouth texture, fruity, buttery flavors and a delicate nutty finish. The Meule du Jura is made exactly like a Comté. However, producers are allocated a quota of wheels that can be matured as Comté. The additional wheels are matured and sold as Meule du Jura by the Monnin family.
Pascal Beillevaire has been selling produce from the family farm initially, along with their homemade butter and cream. Thirty years later, it is a company with a unique structure, involving everyone in the sector, from the producer to the consumer.
