That little wheel has been made by the same family, on the same farm, from the same cows, for generations. Marie Serverac’s grandson, Pierre, adapted the size to this small piston-like. If you like Cantal, you will love Le Séverac. In the early 1900’s, Marie started to raise Salers cows, which give an exceptionally creamy milk that they will only give when their calves are around. That makes almost impossible to produce this cheese on anything but a small scale. Rustic rind, firm straw-coloured paste.
