Jerusalem artichokes are sweet, almost garlicky and mushroomy. Although called artichokes they’re actually tubers – like rough and ready potatoes. You can scrub and roast them whole like mini jacket potatoes and split them open. They create a gourmet flavor in a salad with smoky bacon and go well with sage, thyme, butter, bay, cream, breadcrumbs, cheese or anything smoked.
