The Ecir, the icy wind that lifts the light snow on the Aubrac mountains, gave its name to this soft cheese with a bloomy rind. In 1987, Jean-Marie, our producer, took over the farm from his parents and created the Ecir which looks like a "gros pérail". It is the only soft cheese produced on the Aubrac plateau!
