Brun de Noix is produced in the countryside by our cheesemaker in Machecoul. Made from raw cow milk, Brun de Noix has a rind that is brushed regularly with walnut and kept in a moist cave for up to 2 months. This soft and delicate cheese has a nice yellow color. In the mouth, it’s perfectly balanced with the fresh milky taste of the cheese and the powerful nutty notes of the rind.
