A rich and creamy blue cheese from the same family as the Roquefort made of pure cow´s milk and aged in the natural limestone caves formed in the Tarn river for 3 to 6 weeks. The damp ventilation that runs through these caves, thanks to natural chimineas formed in the cliffs, allow the cheese to mature and develop the strong character for which it is widely known: summer pastures with peppery and spicy notes. This chic blue cheese enjoys its Appellation d'Origine Contrôlée (Controlled Designation of Origin) title since the early 1950s.
