Pancetta that’s been salted and dried for several weeks. Pancetta is often thought of as the Italian version of bacon. The cures are similar, though bacon often has quite a bit of sugar, while pancetta is often made without sugar or with minimal sugar.
The drying process results in a delectable homemade charcuterie with an incredibly complex flavour, perfect for dicing fine and including in traditional Italian recipes.
